Let me start by telling you a little about my co-worker Ms. Sarah Teel. She's by far one of the most adorable people I've ever known. She wears vintage clothing, her hair always looks fantastic, and she is of course the goddess of baking. She makes oreo balls that are to die for. See here she is with me and Danielle in a cheesy going away gift picture for our other co-worker Margo.
She's so fun, she decided a couple of weeks ago that she would wear pink every single day until Valentine's Day. Talk about committment! And hello, she shows up to my silly Christmas Sweater party wearing, hello, tartan! The girl has class.
I love this girl! Now then, enough about how lovely she is, and onto how lovely these S'more cupcakes are!! When I got my hands on mine and had my first bite I told her:
Me: "Sarah, with your permission, I would like to dub these S'moregasms."
Sarah: "I'm not giving you permission."
Me: "Why not?! They're delicious!"
Sarah: "Because calling my sweet little innocent cupcakes S'moregasms makes them sound dirty!"
Me: "Oh honey. There's NOTHING dirty about a S'moregasm."
And friends, there isn't. Nothing dirty here. Just be careful eating them at work. You may find yourself making involuntary noises which express great pleasure in what you're eating. Below is the recipe becuase she loves enough to share!! Happy Valentine's Day all!
Sarah's S'more Cupcakes
1 box of betty crocker chocolate fudge cake mix
1 package of chocolate pudding (not instant)
1 bag of mini choc chips
4 eggs
1 small thing of sour cream
1/3 cup oil
1/3 cup water
Use ice cream scoop to scoop into liners, bake 350 until the tops of the cupcakes crack and look done
Icing:
1 stick of butter, tsp of vanilla
Slowly add powdered sugar and a little milk until you have the consistency of a thick icing
Add a 16 oz jar of marshmallow fluff and whip it until it’s all incorporated. Make sure it’s not too running, if it is, just add more powdered sugar. You don’t want it running off the cupcake
I spoon on the frosting. It’s not worth piping, as it doesn’t hold it’s shape. I place a dollup on each cupcake and it ends up being a little white cap.
Top with either hershey’s bar, or drizzled chocolate or a graham cracker, or all three!
Frosting freezes well. It will make a ton.
